Can anyone advise what the recommended internal temperature is for a chicken thigh when it is ready ?

YUP--what Blu said!

I brine and find that anything from 175 to almost 200 works great!

The safe temperature is 165, so anything above 165 is safe to each, but I prefer the texture at around 180.

Ooops... Ron-L is correct on 165* as a minimum temp.

(I was thinking of 180* is better suited for legs/thighs - being a [darker meat] density.)
