I was planning on doing a pizza on my kettle today (quick easy pizza dough recipes (http://www.bbq-brethren.com/forum/showthread.php?t=154626)), but ended up playing ball with the boys for too long and didn't have time to get to the store for pizza supplies. So we raided the kitchen to see what we had to cook and decided on doing some quick quick tacos on the kettle...

Getting some coals ready...

Coals all set to cook...
Not pictured are a few hickory chips I threw on that we're left at the bottom of the bag of chunks I recently finished off.

Burger, onions, salt, and course pepper in the cast iron getting started...

Getting closer...

Meat is browned up and onions are translucent, on to next step...

Some Old El Paso taco seasoning (no substitutes acceptable) and some Pace mild salsa. Normally, we use the Pace Picante (which is way better than the salsa), but we were out today...

Salsa and seasoning in the pool and pan indirect now... (Sorry for the smudge on the phone camera lense :mmph:)

Meat simmering and getting tasty and warming up the tortillas. I love a little char on them... (Go Reds!)

Plate shots...

Quick and easy with the materials on hand. I'd do a bit different if I had a chance to run to the store, but still quite yummy. The meat definitely picked up a hint of the hickory flavor from the hickory chips. If I do it again, I won't be adding any smoking wood to it.

Thanks for looking.

We have 2 young, very active boys, so impulsive dinners are the name of the game for us. I love Q'ing, but I love spending time with my boys much more. So spending an unplanned 1.5 hours playing basketball with them was well worth the change in plans. One of these days, they will have more important things to do than to hang out with boring ol' dad. Gotta enjoy 'em while I can! :blah:

Looks good. Have you tried Kroger's Private Selections brand salsa? It runs circles around Pace IMO. The restaurant style and zesty cilantro is especially good. Give it a shot.

I'll have to keep an eye out for it. Not sure why we even had any regular Pace salsa hanging around the house. We always go for their Picante. I'm a medium guy, but the rest of the crew has to have mild. :mmph:

I had some of the leftovers for lunch today. It was better today than it was last night. I think some of the favors mellowed and blended a bit with time.

Ok, I have to admit, never used my cast iron on the kettle... do you get a decent smoke or grill taste?

Yes, it definitely picked up the hickory. In fact a bit too much for my taste. Next time I likely won't add any smoke wood to the coals.

I keep meaning to pick up some oak, but I've never used any for smoking yet. I need to go look at my firewood pile to see what I have there.

A good friend got me the set of Reds BBQ tools. There is some tongs and something else (don't remember off top of my head) that came in the set.

I'm so excited that spring training has started. If they can stay healthy, it looks to be another good one this year!
