Tonight going to be putting a brisket in the UDS. Trying something different tonight, going to smoke with walnut. Should be interesting. Ill have pictures tomorrow.

Pretty risky wood choice for such an expensive piece of beef in my opinion.

I am going to assume this is because you have a lot of walnut? Because I can't imagine there is any other reason you would choose to use walnut for smoking.

I may be taking a risk but so far the walnut smoke smells great. UDS started hot but holding steady at 250.

Walnut turned out great! I did use is sparingly.
