I am station here at Tinker AFB here in OKC. I have never use a smoker before, and I am in the process of building my very first smoker (UDS). A friend told me about these smokers and after one google search and a few hours of reading this forum I was hooked. So I will probably start a build thread and try my best to pst plenty of PRON.

A fatty is always a good choice but never cook JUST one. Trust me on this.

A pork shoulder or chicken are also good choices since shoulders are pretty "forgiving" when you're learning a new smoker and chickens are fairly cheap to practice on.

Thank you for your service!
