Can I just toss a pork belly on the smoker or do I have to cure it first?

If you are trying to make bacon, then yes you have to cure it.

Otherwise you will just have cooked pork belly.

I saw something on a cooking show where they cubed cooked pork belly, battered & deep fried it. Then dipped it in a maple bourbon sauce. But I missed the beginning and wasn't sure how they cooked it first.

I havent tried yet but I think a little pork bellly or side smoked and sliced like bacon would be an awesome topper on a burger or with eggs. I hope someone chimes in with some results.

Yes, give it a nice rub, toss it into the smoker and let it roll. At 250f, your looking at 3 hours or so. It is delicious.
