Had the urge for some wings and cheese fries today. Fired up the Kamado Big Joe and ran her at 325F the whole time. Wicked good and hickory was the choice of fuel today. Rubbed down the wings with Oakridge game bird and chicken rub. Grub was gooood. :thumb:

Those are some good looking wings.:eusa_clap
Can you describe what you are cooking on? Looks like a half pizza stone. Is that standard equipment with the cooker?

I'm cooking on the grate itself. But beneath is the split heat deflector. It comes in 2 pieces. I have it setup as a indirect/direct cook. It's a Kamado Joe accessory.

What kind of sauce did you use on the wings? Looks farkin' delicious! I wondered who would only make two pieces of bacon at first then I remembered the fries...I'm not even hungry right now and I'd eat the chit out of those!

Tell me about the sauce you put on those wings. :becky:

You killed me with those farkin fries.

I'd crawl through 40 feet of concertina wire for plate of those.

Oh, and the wings look tasty too. I just got 5 packages of Oakridge rubs and can't wait to give them all a try. (Used the Santa Maria on some butterflied tenderloin filets Christmas night and it rawked.)

I tossed the wings in a bowl of head country hot. That sauce stuck on good to the meat.

The fries consist of colby-jack cheese, green onions, jalapeños, bacon, and ranch dip. Stole the recipe from Chilis.

The fries....did you cook them on the grate? I've never tried to fix fries on a grill before.
Thanks.

jonI've done fries in a pellet pooper several times with good results. I just put them on a perforated grill pan, season and cook. Turn if needed.

That's some great lookin' grub!

What's in the foil packet with the jalapeņos on top?

It's great to see that others prefer grilled wings to the fried mess that's gone commercial!

Just jalapeņos. I would have smoked it whole, but I forgot and had diced them already.
