When the weather outside is frightful, Pig Daddy makes Pig Candy and drinks Kentucky Bourbon.

Thought I'd give this a try today. Came out fantastic. The only thing I added at the end was a brushing of pure maple syrup, otherwise I followed the recipe to the T. Given the amount of chili flake, I was shocked my kids ate this up. The only things I may do differently next time is drizzle it with semi sweet chocolate and make more!

Started with fresh spices. I coarsley ground the pepper and corriander myself...

Next, I got my fire going using Royal Oak lump...

I didn't want to take the time to heat up my Backwoods, so I used my Weber Kettle instead. Dumping the coals in one basket I offset at 275*...

I then followed the recipe by combining the light brown sugar, water, corriander, red pepper flake and black pepper in a pot. Once boiling, I removed it from the heat and coated each strip of bacon in the mixture...

Then onto the Weber using some cherry wood...

There she cooked for just under 2hrs rotating half-way. It's 32* here in Chicagoland and I only had to add more lump once to maintain temp. Gotta love the Weber...

I'm with you on the bacon and SchatzSea on the JD! I've got a little bacon sitting in the fridge that needs cooking...we've got a match! Thanks for sharing.
