I really like this one.

Started with 4 ancho and 3 New Mexico chiles

Ground 'em up

Made a paste with the ground chiles, cocoa powder, corn meal, broth, cumin, mexi oregano and cayenne chile powder.

Sweated some onions and jalapenos

Added the chile paste with tomatoes, more broth, molasses and garlic and simmered.

Browned the beef in two batches

And deglazed the pan with beer after each browning, then added beer to chili.

I dvr'd the tv episode, in your opinion how do you feel it turned out? Always skeptical of ultimate anything.

Everyone loved it. Its really complex. I don't usually want chili to be that much work but it's worth out to me. I wouldn't call it ultimate but it's a nice change from typical chili. I add more cumin than is called for.

Looks good, and seems simple enough to me.
