I went out today and used my Christmas gift cards to help supplement a Kamado Joe with the heat deflector. The KJ was on sale for $699 and the heat deflector was $59; it was $805 out the door with a free bag of KJ lump charcoal.
The KJ came packaged really well and it was preassembled with the exeption of the stand. It took about 15 minutes to get it unpacked and set up unlike the 6 hours my gas grill took. I'm very pleased with the quality and sturdiness of the KJ.
I'll be off to the grocery tonight so I can give it a try. Any suggestions?

Just make sure that when you're moving it to pull and not push. You don't want to end up with a scrambled egg!

Chicken thighs are easy and taste great. 375°-400° For crispier skin, remove the heat deflector for the last few minutes of the cook (use welder's or fryer gloves)... Plowboy's "Yardbird" is my go to rub for poultry... Watch it closely if finishing directly over the coals... it burns easily. Good deal on the KJ... I bought a similarly equipped Egg several years ago and the final price was $200 more than you paid... and that was with $200 off because it was a demo. You got a good buy on an excellent kamado.
