View Full Version : It sure was a SMOKIN Christmas for Wampus!!!!

So I did quite a bit of work with the smoker(s) this past few days.
Here are a few highlights:

Saturday it was time to smoke the wet cured ham that I cured for 8 days last week:

....which went in the fridge to rest and distribute the smoke flavor and was served on Christmas Day at Mom & Dads. It was farkin AWESOME!!!



Then on Christmas Eve, I smoked a few fillets of rum marinated salmon:

......AND 6 lbs of Neil's Nuts (without as much spice my first time out) which I gave as gifts to the family and had some around for munching:

And then last but CERTAINLY not least, I hot smoked a 15 lb Prime Rib Roast on Christmas Eve as well:

I sliced the ham over at Mom & Dads and didn't have the camera handy.
I had a bit of "spirits" on Christmas Eve and that's the only thing I can think of that caused me to forget the sliced photos. THAT and we were all really HONGRY.

Ha! I got you beat. I didn't even get COOKED pics of our prime rib. We only got as far as taking pics after it was rubbed. Looking good Wamp!

It ALL looks MITEE TASTEE! What do you mean,exactly,by Hot Smoked? Guess I'm just askin at what temp did you smoke it and what interior temp did you pull it off the cooker?(rib roast).

BTW, what recipe did you swing on the wet brine ham?

This recipe is straight out of the book Charcuterie.

Here it is:

American Style Brown Sugar Glazed Holiday Ham

The Brine:

1 gallon water
1-1/2 cups Kosher Salt
2 Packed cups dark brown sugar
1-1/2 ounces of pink salt (Sodium Nitrite)
One 12-15lb with skin and Aitch Bone removed

The Glaze:

1-1/2 cups of dark brown sugar
3/4 cups dijon mustard
1 tablespoon of mince Garlic

Recipe:

Combine all the brine ingredients in a container large enough to hold the ham. Stir to dissolve all the salt and sugar.
Submerge ham in the brine. Weight it down if necessary to keep it fully submerged for 6-8 days (half a day per lb)
Remove ham and rinse thoroughly under cool water. pat dry and place on rack and refrigerate for 12-24 hours to dry.
Smoke the ham at 200 for 2 hours (I used apple and it was awesome)
Meanwhile, mix the brown sugar, Dijon, and garlic in a bowl until smooth. Brush the ham and reserve the remainder.
Continue to smoke the ham at 200 until it reaches internal temp of 155 (4-5 more hours for me)
remove the ham and brush with remaining glaze.
Refrigerate or eat warm right off the pit. We reheated ours and it was unreal. best ham I've ever had and all 20 people that had it agreed. It was destroyed in minutes.




I used twice as much glaze since my ham was 16.5 lbs and had a lot more surface area than the one in the recipe.
Other than that, I followed the recipe to the TEE, including having plenty of rest time between brining and smoking and between smoking and reheat/serving.


It turned out FANTASTIC. Everyone loved it. We're STILL enjoying the leftovers in the form of HAM SAMMICHES!
