Hello from Arkansas and Merry Christmas!
I am a long time smoker of shoulders and Briskets and love to cook just about anything. I have been cooking on a Brinkman (Horizon) offset for years, but just recently built a vertical reverse flow insulated smoker (needed more room). Still need to skin the outside but have tested it with 3 cooks so far and very proud of the results.
