Okay, I know this will make purists bristle but here's my shortcut to brisket. I made a fire with RO Chef's select and 3 mesquite chunks. I "banked the fire" with a mesquite log just to see how well it works. Works pretty good. I got a good 2 hours out of this setup.

I put on 2 small tri tips and cooked them for about 2 hours. When smoked with mesquite and sliced they aren't a lot different from smoked brisket. See that smoke ring?

Thanks! There's another one on the opposite side and I keep one inside. With this cook I started keeping a bbq diary and am tracking the temps so that I can better guess how much fuel to use and when to add.

Yep. It's really messed up how many rigs come with improper T'sat placement.

The difference between good BBQ and so so BBQ is night and day. :clap2:
