6 egg brisket, 6 drops of fish sauce to the eggs for salt and umami boost, perfectly smoked tender, peppery Texas brisket. Topped with moms canned tomatoes with jals and onions.
Also a few honorable mentions, worked on the comp chicken halves. I think be got the ticket with the brine, marinade, rub and glaze combo. God they were awesome. We used central market mesquite lump with fresh peach.
