How long will it take to cook a 3lb tri-tip? I figured around 300 on my performer reverse sear.

No more than 50 minutes would be my guess. Think of it as an oversized steak. Worst thing you can do is overcook it.

How long will it take to cook a 3lb tri-tip? I figured around 300 on my performer reverse sear.
I do a reverse sear of approx. 20 minutes per side at 300 until I have an IT of 115.

I then go wide open up on my vents and let it heat up to around 500. Then a sear for 5 min. per side. giving me an IT of approx 130.

Foil for 15 minutes and you get this.
