Just wondering if wagyu beef realy is all the rage? I've always cooked CABs and everyone loves them. If wagyu realy is better is the cooking process and final temps etc any different?

Wagyu is still beef, and a lot of the principles still apply to cooking a Wagyu cut to any other cut from any other breed. You may find the stall is reduced in comparison to other breeds of beef, and it is fattier. Allow for more fat rendering.

Waygu IS all that it's cracked up to be. But remember, there are rankings for waygu...i.e. a 2 and a 9 are WORLDS apart.

I just learned about wagyu this past weekend and my wife and I went to a steak house that had a 20oz bone in wagyu ribeye. I had to try it. 90.00 later I was broke and dissatisfied. Maybe it was just an unlucky experience but I didn't see anything special about it. I've bought better steaks at the local grocery stores.

I've had better luck when I overcook wagyu...to mw or w done to render the fat.

I tried wagyu in contest and it went from undone to overdone in a blink. since then i was told not to cook the wagyu to 190. I'll stick to Angus in the future.

I cut the beef to tataki shape, get the grate as hot as I can, and turn every 25 seconds on 4 sides and it's done.
