Okay, typically I have some wasted bits and pieces after a cook that are either too dry or or too strong or hard as a rock, etc. I usually keep these for use in beans or sauces, but I wanted to try something a little different.

I made a brisket yesterday, and I had quite a bit of unusable pieces from the ends that were just absolutely like leather. Bad enough where I thought about throwing them out as I already have better "waste" pieces in the freezer. Then I decided to try something a little different.

I took half of a large onion, diced, along with four garlic cloves, finely chopped, and sauteed them over medium heat with a lot of butter. When the onions became translucent, I added my chopped up waste brisket and cooked with the lid on for a few to try and rehydrate the meat some:

It worked pretty well, so I tossed the whole mixture with a little sauce to coat everything and cooked for a few more minutes:

Looked pretty good, and tasted really good...but now what the heck do I do with it? I took a trip to the store to look for ideas, and I came across some egg roll wrappers, and it was on!

I was really happy with how these came out, and they were a big hit. Great finger food for the game. I need to get ambitious more often!

Though I'm not a fan of ranch, the rest looks like a great use of "unusable" brisket!

Looks great......wonderful wonderful "mistake?", "experiment?".......I love it when a total stab in the dark comes out as fantastic as that. The only drawback is that it can be tough to duplicate sometimes, lol.

Thanks! This is really going to make me rethink what I consider edible after a cook. I'm thinking of keeping all of my scrap trimmings after cooks, making these in batches and freezing them to have for the Superbowl. I can have beef, pork, and chicken BBQ egg rolls...

In the voice of mom "son where are your vegetables?" Might try adding some shredded cabbage to the skillet just before filling the rolls.

By the way looks very good, and has added yet another thing to try. This place is gonna make me fat (fatter).
