First time cookin' beef ribs for me...

Great flavor, but they were a little tough. Will have to let them cook longer next time.

Does anyone cook them to a temp or just use the poke test?

Just the probe! I had to learn the hard way with the beef ribs, let 'em cook. I found 275 is a better temp, at least on my egg.
Love the beef ribs, they are my favorite now.
