View Full Version : Cheesecake on the WSM (pics)

Nothing crazy new, but did a cheesecake on the WSM Sunday. Or actually my head desert maker (aka my girlfriend) made a cheesecake on the WSM as I took pictures and licked the spatulas, mixing beaters and bowl clean. Oh it was a pumpkin cheesecake.

Did it on the WSM because she wanted to practice for a competition coming up where desert is looped into "anything but" and it all has to be made on site whether it is meat or desert. Always awesome to hear your significant other say lets cook on the smoker :-D.

We just used Kingsford with no wood. Cheesecake cooked without really anything weird happening. Not that I thought it would catch on fire or anything, but the heat is slightly different than an oven. Ran it at 325 and it took about 90mins to bake I think (she was doing all the baking as I was sitting reading on the forum).

Doing a quick caramel drizzle practice on some slices. We'll have some more garnish at the competition.

I was stalking the plate waiting for the perfect time to strike.....aka when I was approved to eat. It didn't get done till 11pm, but nothing wrong with a few pieces of cheesecake before bed right?

I find that licking the spatulas is a vital aspect of cheesecake baking that largely goes unnoticed. Definitely you should receive full credit for those excellent cheesecakes... and I think it's wonderful that you have such a considerate girlfriend who is willing to assist you in such efforts. She's a keeper. :thumb:

Thanks. I'm glad I'm not alone then in thinking my participation was just as crucial as the actual baker. And the GF is great. Totally into the BBQ thing. Definitely lucky.

After seeing cheesecake win every dessert category at the local comps the last couple years I think you're on the right path.

Thanks. Tasted like normal to me. No grill/smoker taste at all. No real advantage I can see to doing it on the smoker as opposed to an oven. But since I have to cook it on site I wanted to practice on the WSM. So I normally wouldn't do it this way. Cool to know it works though :-D.

The WSM fluctuates temps a lot less than an oven. That is a major reason to use the water bath in the oven. You have the potential for cheesecake nirvana.
