So 3 weeks back my wife agreed to have me cook a 6Kg butt for a dinner pulled pork, 3 kinds of slaw, mushrooms, and home made pork & beans.

Well danged if this last Tuesday I had a problem and ended in emergency for a suspected MI, it wasn't but some other conditions did come to light. Which has got me on a NO sodium diet or as close as is possible.

So who's done a pork butt with no injection, no slather, no salt, and how was it nekkid?

What do you recommend for flavouring? So it's not really nekkid but sodiumless.

I'm sure if I just injected with apple juice and bit of pineapple and then added some garlic, onion powders, some paprika, and chili powder as a rub, and cooked it for 12 hours it'd be "OK" . But how do I get it over the top without the sodium in my normal butt injections and rubs.

I just got my butts and Q to where it was great now I have to figure out a way to go sodium less.

There are allot of different ways to punch up flavor with out adding salt Mojo Pork comes to mind http://www.food.com/recipe/Mojo-Pork-116050 as does Pork al postor http://mexicofoodandmore.com/dinner/tacos-al-pastor.html and Cochinita Pibil http://www.whats4eats.com/meats/cochinita-pibil-recipe just omit the salt in the recipes there will be plenty of flavor

I have done pork butt many times in a Cuban style, where I poke holes in the but with a small knife, and stuff garlic cloves in the holes. I roast it on the WSM and cut it into chunks to serve, usually with black beans and rice, and some crusty bread or fried plantains.

When you can't have salt, look for ways to use herbs and spices to create flavor. I've used finely dice jalepeños and chopped onion in my black beans instead of salt, and actually liked it better.
