View Full Version : Weekend Loinback 2.5 lb Ribs

My son wanted some ribs this weekend. Sorry no pics but believe me they were beautiful and tasted great . I usually use Rod Grey and Johnnie Trigg's technique but I strayed this weekend. Used SGH rub and cooked them at about 275* through-out the cook, WSM Kingsford no smoke wood , no water foiled pan heat-shield, meat side up. Cooked to toothpick tenderness, maybe a little over done. Glazed with Blues hog. They were trying to break when I picked them up. Took about 4 hours. I didn't watch closely. No foil.
I was pleased with everything except when slicing. The bark was too hard and instead of cutting cleanly they tore. Next time I'm going to spray with a little AJ a few minutes before taking off to see if that softens the bark a little. It seems I do them a little different everytime I cook them. For home cooking they were very very good. Just not up to comp standards because of the torn bark . Hope everyone had a good weekend and for those coastal brethren batten down the hatches.
