Jessica has been burning a while and boy is it going to take some getting use to.

She definitely raising much slower than my brinkmann did, but holds temp a LOT better. It's going to take some time learning the temp control too ... And I'm a-ok with that. Ready for the first food run Saturday

New cookers sure are fun. A short time age, about three months, I got a Lang 48. A real dream to cook on. If you have any questions about firing yours up and temp control, give me a jingle and I'll help where I can. They really are pretty easy to use in my short time of use anyway.

Leave that door open and let her breathe till she gets to temp you want. Leave exhaust wide open always. Cooking in greer this weekend with the 84 and 36. Just look for the lang trailer you can't miss it.

All true statements.

That thick steel takes a while to get up to temp. BKBBQ, is right. Crack the door to let her get a little more air flow when you fire her up. You will soon realize that Brinkmann will be a thing of your past.

I expected it to be slow, but wasn't expecting it to take that long (again wasn't really THAT long). I then realized I had way too much fuel in there. I close my vents half way and it was running around 340.

The best way to start an offset like that is to open your main chamber door and fire box door for 20 minutes. After 20 minutes, close your fire box door and leave the main chamber door open for another 10 minutes for a total of 30 minutes. Then, close the main chamber door and keep all air intake vents and damper wide open. You will notice it rise to a cooking temp of 250* or so usually within an hour of your start. I like to let it sit there for another 30 minutes or so just to make sure all the steel is evenly heated.

No input, just want to say enjoy that cooker! I'm hoping to get a Lang in the near future, so I'm pretty jealous right now.
