Hey BBQ Folks i need some Assistance!

I've been experimenting alot lately making my own BBQ sauces, i've learned to make a good tangy bbq sauce. But i want to learn how to make a bbq sauce hotter in general without altering the bbq taste. What can i use (pepper/chili wise) or what types of hot sauce can i use to make it hotter WITHOUT Altering the BBQ Sauce taste? So far ive tried Chili oils/ some hot pepper sauces etc. and they altered the taste of my bbq sauce that i didnt like.. any specific brands you would recommend that i can purchase at a costco/luckys/savemart/safe way? any other recommendations to make it hotter?

i use cayenne or sriracha the sriracha does alter the flavor, but not in a bad way

Cayenne pepper...Texas pete hot sauce works good also, not much heat though..

I think most peppers will have a taste to them. I wonder if you only add the seeds if that will limit the change in flavour. Thai chillies pack a good punch.

Cayenne, Serrano, and my favorite, Chilitepin, it's pretty hot stuff with a mild smokey flavor. Not sure how much any of these will change the flavor of your sauce, but they will certainly kick it up a notch or 5 heatwise.

Using chipotle will also offer a slight smoky taste. I also put red pepper flakes in my sauces as well.

If I were making a sauce, I would experiment with powered peppers. I would then do a blind taste test to see if the ingredents can be identified. I would start at a spice house.

Make an extract of your favorite hot pepper. Here is one for making habanero extract.

Without spending a bunch of money on extracts, I'm gonna suggest Ghost Chile powder.

It will take such a tiny amount to raise the heat level, that you probably won't pick up the taste.

+1 for the ghost chili powder. You can use a little for some bite and slowly add more because it gets hot fast. I don't notice too much extra flavor from it either.

Haha thats why I said a TINY amount!

I have some Ghost Chile flakes, and while they are very very hot, I was almost disappointed.....almost!

If you use salt in your sauce, maybe you could substitute a teaspoon of regular salt for Ghost pepper salt, http://www.savoryspiceshop.com/blends/ghosts.html ?

I use 2 Teaspoons of Salt, would i use the same Ratio?

Ground habenero out chipotle powder, I have had some ground habenero for a while and whenI want some spice I sub that for cayenne and get a nice kick

I make my own sauce and have recently realized that heat is just as critical as salt. Just like an accomplished chef with add just a touch of salt at the end of the process to balance the flavors, heat is the same. When the sauce is near completion, add regular inexpensive cheyenne to taste. I have found this to be the best way to add heat without altering the "flavor".

Thanks for all the input! Ive been using cayenne powder but its not bumping the heat as much as i would like it too, maybe im not putting enough? i use around 3 tablespoons+ i have to verify i have it written down at home. Ill have to try the roster sauce and see what kind of flavor it gives since i love that stuff in Pho lol.. But ill think ill look into buying both Ghost chili and habanero powders and see which work best. thanks again!

Depends on how much sauce you are making and how hot you want it. For a gallon of sauce start with 1 teaspoon of the GPS, if it's not hot enough add the other teaspoon, if its just right then add 1 tsp of regular salt. You will have to play around with it until you find the heat and flavor that you want.

Make sure you're cayenne isn't old. The heat dissipates significantly as it ages.

someone else told me the same thing, i just haven't got my hands on it yet. Now i have 5 things to experiment with, Ghost Salt, Ghost chili powder, Hob Powder, daves insanity sauce and Saracha sauce! Geez is it me or is having fun making your own bbq sauces expensive after a while? lol.

a 6 oz bottle of daves is about 6 bucks at at a specialty grocer and will last you years.

The easiest things are red pepper aka cayenne or Srirachi. They're available in most grocery stores. The only other pepper I'd give real consideration are the chipotles since they're readily available but must be pureed first.
