I've been busy the last couple of weeks but found the time to get away for an evening of fishing. It was nice and quiet out there. :grin:

I put lemon juice on filets...

used Zatarains fish fry with cayenne pepper...
I usually make my own coating but went the easy route this time.

fried til crispy...

made Hushpuppies...

1 cup flour
1 cup yellow cornmeal
1 1/4 teaspoon baking powder
pinch of salt or to taste
2 eggs
milk to make thick batter

minced onions
jalapenos
and corn

dropped by spoonfulls into hot oil, fried until golden brown...

I had a nice evening at the lake and really enjoyed the fresh fish. :grin:

Wow one of my favorite dishes...fried catfish. That catfish looks delicious and those jalapeño hush puppies just make it that much better.

Things are kind of dry and crunchy around here but no major fires so far.

Looks great Jeanie! When I saw this on your site it gave me a craving for some fried fish and hushpuppies this past weekend. I used your recipe for hushpuppies and did some fried cod fingers and coleslaw and it was awesome. Thanks for the idea, I hadn't fried up anything in awhile, and it was a nice change. :thumb:

Thank you Bill! I usually dump the hush puppy stuff in a bowl without measuring.. so feel free to adjust the amounts to suit your taste. :grin:

Fried catfish is by far one of my all time favorites - you just reminded me I need to fry some up before my lovely wife gets back in town (she's allergic to fish).

You ever put fried catfish on a biscuit? I highly recommend it. :thumb:
