Mmmmm.... had me some tasty lunch today:

A rack of spares trimmed to STL cut and in the drum. Hot n fast; 275 for four hours.

That's a nice looking plate right there. I'm curious about the salsa too.

Roasted corn salsa:
2-3 ears corn on the cob grilled over medium high heat until slightly charred.
Three Roma tomatoes large dice
One medium white onion large dice
2-3 jalapeņos seeded and deveined small dice
2-3 tblspns chopped fresh cilantro
2 cloves garlic finely chopped and smashed on the cutting board with a pinch of kosher salt
Salt and pepper to taste

You can toss some black beans in too if you want.
