Here is the brine I used:


2 tblspoons thyme
2 tblspoons oregano
2 tblspoons rosemary
1 cup Kosher salt
... 1 cup brown sugar
1/2 cup molasses
Combine with 1 gallon of water

brined the chicks for 5 hours. Then let them soak in some Yardbird and my competition rub. 2 hours on the UDS @ 275-300*. a nice glaze of Blues Hog for the last 15 min. They were pretty dang tasty!

some crap my wife keeps pushing on me... I think they call them carroranges... no that doesn't sound right... something like that. It's rabbit food is all I know! lol

The brine is a good brine. the only negative I can say about it is the rosemary and thyme are hard to rinse off the chicken after the 4-5 hr brine. I would try to find them minced or powdered so maybe they will come off the chicken easier... next time I might even back down to 1 tablespoon of each. my wife loved it but I wanted to taste more Blues Hog and the spices of the brine were coming through a little more than I would have wanted. just my review and plans for next time.

give it a shot and see what you think.
