I have had a WestonPro-2300 for several years now and love it. A popular PBS cooking series rated it #1. This one was the only one tested that didn't allow freezer burn after several months.
Check Youtube there are a number of videos demonstrating it. I believe it pulls 32lbs negative pressure. I live in hurricane country and it has helped me immensely storing foods for emergencies. This model is just border line commercial.

I don't get you issues with the food saver??? We use ours all the time, it doesn't take me hours to do what you are talking about. I don't have to wait between sealing things either

Never have done 40 items, but we've come home from Costco and sealed about 20 items in a row without getting any errors. ... Steaks, chicken, fish, etc

I guess that's why I wasn't sure what you were talking about. We've had this unit for about two years and have never had any regrets.

a few weeks ago i smoked 8 butts, pulled them all, portioned into 1lb piles and vacuum sealed each and every one of them

my foodsaver never gave me any problems, errors, wait times, etc.

It's too bad- i think it was food saver who had a sale on their website a month ago- 50% off any sealer.

Besides storing food, doesn't vaccum bagging meat expediate the marinating process? I think I heard this on Iron Chef America where it's used a lot (a 20 minute process).

Yes. But you have to be careful not to allow liquid to be sucked up into the vacuum pump with the model I own. There are a few hat tricks you can do like adding a piece of paper towel to catch the liquid. The marinated meats you see in stores are done with a vacuum chamber model.

I have been very happy with this one:

http://www.webstaurantstore.com/vacmaster-vp112-chamber-vacuum-sealer/120VMASVP112.html#customer_reviews

It's a chamber style vacuum, so works very well with liquids also. The bags are WAY less expensive then the food saver....I paid abut 6 cents each for the boil in bags that I use, and thy are large size, 11x14" I think.

I have the Vac master chamber one listed above as well. It's pricey but the bags are super cheap and it works great with wet stuff. I like heavy duty.

We butcher hogs every year and have had terrible luck with the Food Saver brands, they take forever between cycles, overheat, and overall just aren't built very well. The two we have now are from Cabelas, their Pro Series vacuum sealer and their Commercial Grade vacuum sealer. Both of these units are winners and can handle a lot of use and if anything ever happens to them, Cabelas stands behind their products.

I use one of these. Water won't hurt it. Never had problem with over heating. Replacement parts can be had for a low price. Got mine on EBay.

The Weston Pro 2300 is the Cadillac of Vacuum sealers. It will run you around $375 but if you have a need for one very often it is worth every penny.

Cabela's vacuum sealers are manufactured by Weston.

I have a Food Saver and outside of the motor mounts breaking off (makes loud rattling noise), it's lasted a couple of years. I was able to take it apart and super-glue the mounts, and it's back in working condition. I like the Weston in spite of its price, but those things are huge compared to a Food Saver and finding a place to store it in the kitchen would be tuff.

The vacuum sealer from Cabelas is a Weston 2300 re-brand.

I have a foodsaver also. I like it some but alot of the times it does not want to pull the air out all the time. The small narrow bags are a bi%&h to get the air out. I have the v3250 model. Not sure what else to do. I get so pi$$ed at it. Never over heated. But does not take all the air out. POS!

My foodsaver needs time outs but most annoying is the fact that every tightly vacuumed bag slowly loses its vacuum.
It doesn't seal right:mad2:

We use the VacMaster VP210 purchased from here. http://www.qualitymatters.com/Chamber-Vacuum-Sealers-s/467.htm
Bags don't lose their seal and liquids are not an issue. Didn't take long to figure out it was a good investment.

Email me - the VP112 is the way to go. While chamber sealers are more expensive to buy, the bags are so much cheaper, you end up saving the difference in unit price in the first year... And they work better, so you use it more... and it will end up saving you hundreds annually in bags.
