How is it done best? Cooking too many, and will need to re-heat a slab (maybe more) a day or two later.

I wrap them in foil and put them in the oven at 250* until they are hot. You can also do the same in a smoker. Some people even grill them to reheat.
You can also use a microwave. But, I have found that it only works if you slice them and heat two or three at a time JUST until they are hot.

If you have a food saver you can vac-u-suck them and then heat them in boiling water. We also put them in a roasting pan on a rack with some liquid under them and put them in the oven.

Personally, I like steam, however you generate it. Wrap in foil and put a very little water in. Make sure you have a good seal and put in oven about 325 until warm. You don't want to cook them. You can do the same thing in the microwave with cellophane.
