I smoked a BlackHawk brisket last night. It came out really moist and tasty. Thought I'd share some pron.

Nice job Bo! That's one heck of a consistent product, that Blackhawk brisket. the name makes it sound world famous, like at a really historic joint. Try it in the comps yet?

Not yet. I tanked brisket in my last comp. Came in 11 out of 28. That's one thing that promped me to develop the BlackHawk technique. We'll see how it goes in the next one.

What's a Blackhawk brisket?

It's a technique I developed for improving the bark on HnF brisket. It's named after a 19th century VA BBQ cook famous for his BBQ beef.

A worthy goal to try for. I'm not sure anyone could top that Bo. If you were to look up Brisket in the Bar-B-Que dictionary, it should have a picture of that one there. Great job, and those lucky enough to get to eat that have a treat in store. :thumb:

Love that! Moistness has been an issue for me on the last couple - taste - check, tenderness - check...moistness - yes on the point and the flat moistens up nice when I make chili with it. :oops:

I've noticed if I haven't pulled a brisket off by the time people start coming over, it ends up dry 'cause I'm busy running my yap.
