View Full Version : Char Siu Spare Ribs (Pr0n)

My local Chinese food place has dropped the ball the last few times I ordered BBQ Spare Ribs from them, so I decided Iíd make my own. I found Meatheadís recipe over on amazingribs.com (http://www.amazingribs.com/recipes/porknography/chinatown_char_siu_ribs.html) and decided to give them a shot. The only ingredient I was surprised by was the brandy. I had some apple brandy leftover from another project, so thatís what I used. I also glazed at the end with a 50/50 mix of honey and agave nectar because I ran out of honey, but I donít think this had a big impact. I didnít get as much pr0n as I wanted, but some is better than none.
The marinade:

Two racks of spares took a six hour bath in this deliciousness. I agree with Meathead that overnight wouldíve been better.
I put these on the kettle at 350. Meatheadís recipe called for baby backs, so increased by cooking time to just shy of 2 hours with the glaze applied in the last 15 minutes.

No harm done, these came out really well. I think Meathead has a winner with this adaptation. Donít think Iíll be ordering spares from my local place anytime soon.

Figured Iíd stick with the theme and rock out with my wok out and make some veggie lo mein to go with the spares.

Looks good! I too stopped getting char siu spares from my local chinese place. I'll have to make these sometime.
