My mother in law asked me to smoke a brisket this weekend for a few guests. I plan to cook it HnF like the last one I did which came out very well. This will be the 3rd brisket I have smoked so wish me luck. Don't know what to look for in a brisket how does this one look? My mother in law chose it. 675656756667567

Can't tell how thick the flat is from those pics. the point looks to be decent sized. If the flat is nice and thick, I would be happy to cook it.

What grade is it? Prime, Choice? That makes a difference in how I smoke one.

In that case assume Prime. I know your going HnF and there are folks here that know much more than me but I would allow more foil time with a little more liquid.

Same as I did before with HnF I just injected it. I wrap with butcher paper.

At that price I wouldn't think it be prime

Oh, the injection makes a difference. The big deal is to go with what works. Hope you'll post pic's. ;D

It's a good looking cut for sure. Once it's laid out of the cryovac just check the marbling.

It looks to have decent flat and point from here.

For those that want to know what grade, that is USDA inspected UNGRADED. HEB has those in stock most of the time. They'll occasionally get some choice or CAB choice in, but it's usually the ungraded stuff. At least walmart carries select and choice packers. Great price though, same ones here are @2.18/lb and rarely go on sale.

If ya put it in,unwrappedat any time,and leave it till your desired finish temp., then pull her out,you'll have a wonderful Brisket:mrgreen:.

Opening your Smoker waste time , loses juice-thus drying it out , causes flare-ups which burn the meat , and (when foiled) softens the bark.

You only need to tend the fuel , taking care to maintain +/- 10° of 225° and watch your Internal meat temp. rise to a minimum of 185° , for slicing , in the Flat , then remove the Point ,chop ,season and sauce to return to the Smoker while your Veggies cook.

That's how I do it and it turns out great every time...:tongue:

I'm pretty sure I would eat a lot more briskit if I could get them for that price. Looks like a pretty good briskit, by the way!:)

That price makes me sick. Paid 2.80 per lb at walmarts last week. The meat market was 3.25 per pound.

That packer is in cryo and is ungraded, so normally you would look at marbling for an indicator of quality...but this is brisket so don't sweat it. Just cook it until it is tender. It looks Choice or better from the pics.

$2.99 for packer (don't recall grade) at my local butcher. that is on my to do list for my week off.

tomorrow cooking ribs for a party my buddy is having. then gonna stop by the annual bbq fest in town and see what skidder is cooking. was going to compete this year but made a commitment so couldn't back out. next year though!

Prime at $1.48/lb? Around these parts $1.48/lb. doesn't even get you horse meat. If it doesn't say, I'd think it would be select.

It will have a grade stamp unless its ungraded. Looks good though and at a good price.All meat is supposed to be inspected but does not have to be graded unless you represent it as a particular grade. I just paid 2.97lb for a similar packer,ungraded.

I have bought from sams as well and the price for prime is great. The last one came from W mart but was the only place in town to get one. Dont worry about the grade if this is your first, just cook it till its tender. I'm not good at temp control so mine cooked fairly hot but came out just fine.Will get a better quality cut when I get over to sams.

Packer briskets are all briskets. They all come from the same place. 2 that I know of are Excel, and Swift. IBP apparently does them, but never seen an IBP packer locally. Lots of pork marked IBP though.

I'll take a chance on Excel choice packer every time. They's good dead cow. :tongue:

** edit** Forgot to mention the local HEB is now carrying Meyer natural angus choice packers for .............. $3.25/.lb. But they are really tender judging by the way they fell over my forearm. These are the same ones that Franklin BBQ uses. (I hate the fact that he's never tasted a decent tri tip, but he's the current brisket king, gotta give him that).

At $1.47/lb I doubt it's prime beef. Since it's a Swift product the question is has it been injected with liquid and seasonings?

TriTip is cheaper than brisket here in Northwest Arkansas. I prefer TriTip, so it has been some time since I've cooked a brisket. Just so much easier. And IMHO, taste better.
