No more backyard spares for me, they are definitely better through science. Being BBQ'n for awhile, and started competing this year. I think I cook great backyard ribs, but our comp ribs just lack the pop. First go at injecting some SLC spares, wow what a difference in every area. Same rubs, same sauce, same timeline. Moist, tender, and great bite. And plenty of POP!

So what did your injection consist of? Did you inject every meat space btwn the bones?

Looks like a nice rack of ribs there

Used Butchers Pork injection, mixed with apple juice. Real simple, just injected between the bones.

You ever try a diluted solution of bromelain, which is a natural ingredient from Pineapple stalks and used in most meat tenderizers? Just don't use too much as it eats at the protein and breaks down the collagens (a good thing unless you use to much or for too long).

No, I did try papain on brisket. That was a disaster. Honestly, I think all our ribs have been missing is a flavor boost. Truthfully I'm not a big advocate of injecting, but competition BBQ is a whole different animal. Maybe I'm wrong, we are fairly new at this comp stuff. But points are points. These ribs were noticeably improved over our previous practice cooks.

BTW the wife loved the custom WSM handle you made or her.

:thumb:They look fantastic, if I ever only cook a rack or two, I'll give it a try. I always seem to be doing 5 or more racks at a time and that sound pretty time consuming, but yours look great.

Curious about the injecting, though - sounds like it was more for flavor than moisture?

Why not inject one rack and cook the other 4 your normal way and have a side by side.comparison?

That way you really know if they are better.
