View Full Version : Fitting Brisket to Mini-WSM

So i really want to try a brisket out this weekend. However the only smoker i have at my disposal is a Mini-WSM i built 2 weeks ago. I was wondering i can cut the brisket in half, to fit on two of the grates or will that sacrifice too much of the quality?
If so should i just stick to something else, or try it on my 22.5 Kettle?

Keep it whole and cook it on the kettle put it in the middle. Put a Dry drip pan on the coal grate under it and coals around the outside leave a 6" gap put your wood on top at different spots. Light up abut 1/4 chimney full of charcoal and put it at one end of the charcoal to light the fuse. Open the bottom damper about 1/8" and open the top to 3/4 open opposite the fire.
You will be running 250-270 steady I can get 12+ hrs on about 4 lbs of RO lump.

Will a regular sized brisket not fit on the WSM 18.5? Or is he talking about something different? I would be sorely dissappointed if the 18.5 WSM won't fit a brisket as I just ordered one.

He's got a mini wsm, made out of a smokey joe and 32 qt tamale pot I think. They're only about 14" in diameter.

What El Ropo said. The 18.5" WSM =/= Mini WSM
Yours'll fit a brisket just fine :grin:

Yep just a mini WSM, tamale pot and smokey joe mod, i live in an apartment in a downtown area on the first floor. Not gonna spend 300 bucks on a wsm to wake up and see that it has walked off

I would just rock it on the kettle, much more room and although you may have to tend the fire a little more (not sure never used a Mini-WSM). But if I were in your shoes I would go with the kettle for your cooker.
