Just some Baby Backs, seasoned with Stubb's Bar-B-Q Spice Rub and Bone Suckin' Sauce Hot Seasoning & Rub, 2 chunks of cherry wood. 2.5-1-1 at 270. The WSM surprises me each time with how well it holds temps. 2 vents closed and one slightly opened kept the temps steady!! Love it.

I was skyping with my mother in NJ when I did the bend test. I took my laptop outside and showed her the ribs. I took a bite and she said they looked great and she's gonna cut me out of her will! LOL. I wish I could send her some, but they're all gone!!

I just did some BB for the 1st time last week on my new WSM. Just had the leftovers for lunch. I used hickory. I almost used some cherry wood. Do you like the cherry better than hickory? I have not tried cherry very much.

Cherry is a milder flavor. I like it with pork. Hickory can be too strong for some.

Cherry also helps with the beautiful redish color! Most prefer fruit woods with ribs as pork takes smoke well and their not huge hunks of meat.

Ribs looking great BB are my favorite!!!

I've been racking my brain (no pun intended) on how to cook my first BB ribs tomorrow on my Weber Kettle...Those ribs look incredible, I've settled on your method for my first time out.
