This is a recipe from my sister-in-laws family, they ran a Chinese butcher shop in Los Angeles from the 1940's through the 1970's. It works great for ribs, strips of pork butt, tenderloins or sirloins. Essentially, it is an Americanized version of char siu.

2 tablespoons Hoisin Sauce
2 tablesoons Soy Sauce (dark or regular, not light and never lite)
1.5 tablespoons Rice Wine (sha sing wine)
2.5 tablespoons sugar
1 teaspoon salt
1 teaspoon catsup
1.5 tablespoons minced garlic
1/4 cup honey

Mix first seven ingredients and place in a sealable pan or zip sealing bag. Add meat to bad and marinade over night. Ribs and tenderloins require nothing more than putting in bag. Larger cuts of meat should be cut down into strips.

1 and a half cups Hoisin
1/3 cup soy sauce
1/4 cup honey
5 garlic cloves chopped fine as possible
zest of 1 orange
2 star anise
1 cinnamon quill crushed a little
1/2 teaspoon sesame oil
1/4 cup peanut oil
Marinate overnight.
Cook ribs according to the meat quality your way.
Baste every 20 minutes in the last hour of cooking.

I really like how this came out...

Oakridge BBQ Asian Glaze

The ingredients in the picture from left to right are...

Healthy Boy brand Black Soy Sauce (NOT the same as regular soy sauce!)
Three Crabs brand Fish Sauce
Koon Chun brand Hoisin Sauce
Pantari brand Sweet Chili Sauce (Mae Ploy brand also works well)
Oakridge BBQ Secret WeaponŽ rub
Fresh garlic
Fresh ginger (peeled)
Fresh lime juice

The recipe for this is very simple, just mix all of the following in a medium saucepan and bring it to a high simmer on the stove, stirring frequently to prevent the bottom from scorching.

Oakridge BBQ Asian Glaze

1 cup Sweet chili sauce
1 heaping TBSP Hoisin sauce
1 TBSP black soy sauce (you can substitute 1 TBSP reg. soy sauce plus 1 TBSP brown sugar)
1 TBSP Oakridge BBQ Secret WeaponŽ rub
1˝ tsp fish sauce
1 TBSP peeled, microplaned fresh ginger
1 large clove garlic, peeled and microplaned
juice of one medium lime

When combined, the sauce looks like this...
