View Full Version : Ribs, Sweet Seduction... and an Egg.

Trimmed 2 large slabs of spares and coated liberally with SM "Sweet Seduction".
Into the Egg on the top level of the Adjustable Rig at 250 dome. (Meat high in the dome). Trimmings on the sliding grid just below. Oval stone on the lowest level of Adjustable Rig. Foiled with chicken broth after 3 hr. Unwrapped after one hour in foil. Done. Meat pulled back. Back into the Egg for 30 min to thicken an already thick mixture of Blues Hog and Blues Hog Tennessee Red.

What... No jeers from the sauce free crowd? Actually, these ribs NEEDED sauce... They were moist and tender but lacking in flavor. The rub helped. The sauce helped but I missed the smokey pork flavor that makes one go "WOW!" Plenty of smoking wood (Egg still reeks the day after.) Meat came from Bichelmeyers... always a reliable source of good meats... Hmm.... Pepper... Yes, more pepper... That's one thing it needed... Guess I just have to try it again... and again... :)
