Its 4 a.m. Starting to prep a brisket. I was hoping to be doing an inaugural cook on a Vision Kamado. Alas I was to late yesterday, they sold out... So until next friday I wait.:mad2: But I will cook this on my old trusted ECB for the last time, for she will be retired from my hands to be enjoyed by a new guy, wandering around looking for match light.

Got it on at 5, should be in time for dinner, this is the biggest Brisky I have tackled. ECB settled in at about 230, R.O. And some nice chunks of mesquite. Rubbed with montreal steak spice, garlic, parmesan and some chili flakes... i can`t wait!

Looks like they mis-labeled that fresh brisket as corned beef brisket? It looks like a great retirement dinner to me.

lol I wish I was retiring,another 30 or so years till then! The ECB is getting retired. :sad:

Added more coal at 9:00 am, temperature rose to 250 after that and held till noon and is still holding. The brisky seems to be right on schedule! :clap2:
Plus some Crown floats at high noon for my neighbor (who I turned on to smoking) and I. The floats didn`t turn out,.... toooooo much Guinness Goodness.

Brisket looking nice! After looking at that lunch I have to figure out someway to endure my hunger till suppertime gets here :-D

Almost exactly 10 hours, pulled off at 5 to 3, temp 190. looks pretty nice. i`ll post more after I slice it for supper.

Yes it cooked superbly, although the rub was pretty much drowned right out. The meat was so flavorful. I guess the Parmesan rub will be kept for ribs. Although I am getting my rotisserie out of storage today... maybe a parmesan rubbed prime rib? ... Yeah sounds good.
