So, we finally got our spring (?!) camping trip in. I brought the ECB as I always do. I also brought my Maverick. I put the pit probe in, which is something I've never done in the ECB. I figured it runs pretty hot for a while, then it would mellow slowly as the cook goes on. I was wrong. It shot up to 250* and ran between 240* an 250* for more than 5 hours. I do use a poker to stir the coals from time to time to help the ash fall out the hole. I had no idea that it ran so consistantly. I did PP the first night that came out great. Sorry no pics. It was really hot (100* +) that day and I had consumed numerous adult beverages. The next day I did two racks of beef ribs. Also very good. We also had our DO one pot breakfast. Bacon, potatoes, jalapenos, onions, and eggs, topped with cheese and salsa, with some grilled spring onions on the side and a cold one. It turned out to be a very enjoyable trip, even with the heat.
