1st smoke went great. It was an 8 hour smoke. Good smoke ring. Good flavor. I did burn the bottom of the brisket but I believe if I would have added water at the 4 Hour or half way point it would have been fine. When I reheated it the following day the burned part was a little like bacon bits, so it was sort of a happy surprise. The temp was stable and never went over 265 degrees.

Great looking cooker!

My wife found the bowl and lid of a Smokey Joe buried in the garage from a project I was considering years ago. I'm now looking for the legs to make one of these.

Tamale steamer pot and weber smokey joe is all you need. You can see my build if you search 14.5" WSM. There are a lot of examples on line.

That's not burnt, that's bark! Looks great. Man I gotta find me a tamale pot. Been holding out for a larger, taller one. Like a 60 qt version.

Let me know if you find a tamale pot. I have looked everywhere around here for one.

Cool mini, man! I especially dig your charcoal basket. Can you share the details for that?

colonel: I thought Wal-Mart was carrying the tamale pot online? They will ship it to your local store for no extra charge. Is that a workable option for you?

[sorry back on topic now]
