I've cooked steaks for now on 25 years on the grill. Either a gasser or coal. I don't even remember where I read this Great info about 5 years ago but here it is. My steaks changed 100% for the better:

When prepping any bone in steak, use a butter knife and scrape both sides of the steak with the blade perpendicular to the meat.

Look in the lower left of this pic. I did trim off some fat but the rest is sinew and Bone Dust. Bone dust comes from the meat processors using band saws to cut the beef.

Before I learned this simple tip, I would notice an almost grey color to the meat after cooking. The difference is night and day in taste and appearance. These were some cheap steaks the Wife found on sale. Notice the low marble content.

The next time your doing bone in steaks, give this extra step a try. You will notice the difference.

very nice tip. I have always just rinsed all my steaks off with water to get rid of the bone dust, but will give this a try.

A good meat cutter will use a 'doodle bug' to brush off the bone dust.

I just bough a Lang and was on there web site watching some of the videos of there comp team. The guy prepping the Brisket did the same thing.

I do the same thing with bone-in chops and pork steaks for the same reason.

It,s a little plastic scraper thing cost about 2 bucks. Restaurant or butchers supply should have them.

In my high school and college days I worked in a grocery store and when they were shorthanded in the meat market, that was one of my jobs, to scrape the bone meal, paritcles etc of the steaks and then tray em, price em and wrap em. For time saving purposes, we only did one side and it was done for appearance purposes only. I sometimes do this even today with a spoon, but never really thought it added to the final taste or maybe never thought to compare scraped vs not. Do you feel it's the scrape you gave em this time around or maybe just a better grade of meat that you got this time around that made for better flavor?

Smell the meat saw and you will know why. Personally I would rather drop a steak on the ground than have bone meal on it.

Thanks for the tip. I used to just rinse them off, but now I will make certain to scrape them as well.

Im cooking a bone in ribeye today and made sure to scrape the steak thanks to this tip.
