Hi folks! Enclosed are a couple pics from a Boy Scout fundraising event from yesterday. These are some pics from the early shift. Sorry, no finished product. Was too busy to take pics!! Started at 4A and finished at 1A. Was a good time and people had a blast, but I am pooped!

BTW: The cooker was impressive. Started coals going, and after ~ 10 - 15 minutes, it was up to temp and stayed put till it needed more coals or air adjustment.

Up to temp in no time at all (with a little help from the 8 legged friend on the dial)!

Final menu:
pulled pork sammiches with 6 different sauces, pit beef sammiches, cole slaw, home made mac n cheese, chili, green beans, sweet potato bread pudding with caramelized pecans and bourbon syrup glaze. YUMMY!

But, the BIG part of the event was the whole hog. The final presentation was really something. People were eating the beginning part of dinner in the church when we brought in the pig. Brought the whole hog on stage and started breaking it down in front of everyone! Offered slices of whatever part they wanted. There were many happy people. :D

Am bummed I didn't get any pics of the final product.

That looks like it was a lot of fun! I'm also bummed you didn't get any after shots either.

Gah! The pig presentation in the church wasn't planned... it sort of evolved after the pig came off the fire. I was the assistant cook for the event... the main cook says to me, "Grab a knife." after the pig had rested a bit. I did. We ended up grabbing the pig (still on on the Home Depot pipe) and hauling him into the church, then proceeding to break him down in front of everyone. Pretty cool!

Not so cool? Pulling pork for the early phase of the event (~ 1PM) that had only been cooking for 6 hours at ~350... it was NOT ready to pull. Yet, we had hungry, paying customers waiting. So, we pulled as best we could. My left thumb went numb from pulling ~6 pork butts that were not ready to pull. Not fun. fortunately, feeling has returned. :D

If we do this again next year, we will definitely start earlier.

We all learn and improve our craft by doing it and then consider if improvements can be made.
