View Full Version : Corned Beef Eye Round In The Smoker?

So I found a 4.5 lb corned beef eye round in the freezer.

I have the day off work and am thinking about firing the smoker up, but the instructions on the package say to place it in boiling water, then simmer for 3 hours or until tender.

Package say it has up to a 20% solution added to it.

Will it be to salty if I throw it on the smoker?

I usually drain and soak in water in the fridge for a day or so before cooking.

You can smoke it the way it is, but it will probably be salty because of the corning solution. I usually to 24 - 48 hours soak in fresh water as Gore mentioned to leach out some of the salt. Change the water a couple of times.

Then coat it with a pastrami rub and smoke it. Thirdeye has a good recipe on his blog...

I don't know how an eye round would come out but I smoked a flat corned beef. I soaked it for around 24 hours changing the water a few times. Then I ground up some peppercorns, coriander seed and fresh garlic. Added some sweet Hungarian paprika and a little dry mustard. Spread a thick coating of that stuff all over the corned beef and back in the fridge for a few hours. Smoked it for 12 hours then steamed it for 3 hours on the stove top. Poof Pastrami (sort of).

It came out really good.

I have it soaking in water now, but I guess I'll cook it up tomorrow.

Have to find something else for tonight dinner.
