I got 3 slabs of spares I thawed out to cook today. I got a taste for some slow smoked with some apple and some bourbon soaked sent to me by another member. Then I got the cooker to whip in to cooking shape which wouldn't take to long. Then I can grill and cook a lot faster not as much work to get it done over red oak and coals. I get tired easy these days so I'm not sure which is easier to do for the end product.

Smoke or Grill ?

Grilled ribs can be good but are often not as tender as well smoked ones. If you're new to BBQ I'd recommend the tried and true 3-2-1 method.

hi jacob,

i find that if you put the ribs on the smoker late at nignt using the minon method-i never called it that until i found out that he was doing what i had been doing for years! that you can go to sleep and wake up with great tender smoke ribs in the Weber smoker.
i agree with hub that grilled ribs are not tender like real smoked ribs that fall off the bone with no work.
best wishes

My soon to be 11 year old son help me make my decision. I was out in the shed getting my wood and he comes running out in his shorts. Daddy he shouts, your not going to try and use the weed eater are you? I say playing well what if I am huh. I'll go wake up Mom if you try it, she said she would break it if you don't leave it alone. No son I'm just trying to decide whether to smoke or grill today, looks like rain too. Daddy why don't you just do both he ask? Then it came like a bolt of lightning, I have a 11 year old son who has been at my side smoking and grilling since before he could walk. You want to help your daddy get the tent set up and clean up the cookers? Sure I'll help daddy, cool beans he says.

So were smoking the ribs I will cut to st. Louis cut and grilling the rib tips that come from trimming. We have already got every thing set up and heating up for the meat.

The Bourbon soaked wood I;m using in the smoker gives off an aroma that is pleasing to the senses. Hope that sweet aroma transfers to the spares.

I'm holding off on starting the grill for the tips, I'm hoping the rub I got coming from Dave Klose arrives today and will use it on the tips.

Out of the mouths of babes! Sounds like that young man is not only smart, but a great helper. Let him do the lion's share, Bobby. He's old enough, and anxious to help. You supervise. :thumb;

Love it. My 10 year old helped cut the grass this morning, season the ribs and put them on the smoker. Now he's out riding his bike with friends. We had a great time this morning. Wish I could freeze time and stop him from growing sometimes. It goes too fast.

Letting kids help is the way to bring up the next generation of The BBQ Brethren.
They get hooked pretty fast.
When they go to school and tell their buddies they smoked a brisket or pork butt or smoked a couple racks of ribs over the weekend, they are envied by the other not so lucky kids.

I was fortunate that my Daddy let me help 55 yrs ago.
I learned on an old cinder block pit. I wouldn't take anything for that memory.

I find that my cooks are less straining if I have the WSM ready to go the day before, and I just have to light some coals, and prep the meat the day of the cook.
