What is the best way to cook some Jamaican Jerk Chicken thighs? I havent had them before and dont know if i should smoke them or put them on a charcoal or gas grill?

Indirect heat with a finish over direct heat the last couple of minutes give's me really good results. Other wise, the sugars in the marinade will burn and ruin the flavor.

I do jerk chicken thighs direct, about 375*, and flip every 5-6 minutes for about 25 minutes or until the internal temp is where I want it.

May have been Phrasty's (?) jerk recipe. I forget.

Wife and I went to Jamaica for our Honeymoon. 5 star, all inclusive place, 9 restaurants, ect.... My favorite meal was a guy walking around with a drum cut in half and turned into a grill. He'd give a 1/4 chicken with skin in a bowl and cover it in jerk sauce after chopping it up. It was cooked over direct heat. I ate chicken for more meals down there than all the other 5 start restaurants combined, it was the bomb.

Yeah, we've been to Jamaica quite a few times and love the Jerk.... I notice whether it be chicken or pork, it always seems to be cut into pieces! Maybe more surface area for more flavor?

Don't doubt that in the least... But isn't it like that everywhere? You always find great food on the road... Especially late at night and slightly inebriated :heh:

As far as how to do it... This is how I do mine. (http://www.bbq-brethren.com/forum/showthread.php?t=124670) Basically you'd want to reverse sear it. Obviously best if smoked with pimento wood but it's not a MUST IMO... If you're using other woods, don't try match the strength of pimento wood. It's strong but it matches the flavors of the jerk well. Use a lighter wood so the jerk stands on its own and isn't masked by heavy smoke.

Oh and the longer the better in the wet rub/jerk seasoning. I smoke it at 300-350 for a bit then put it over a low direct heat... don't leave the grill... watch it!
