So today I fired up the 500 and loaded her up with 47 ribs and about 15 lbs of trim from the spares. Here is a pic at start up, will get a finished pic for you later today.

People at work wanted ribs so here we are.
Started the smoker at 7:30ish and put them on at 9:15, they should be ready for sauce at 2:30 -3 then in the coolers so they are ready at 4:30..Then its miller time !

Nice looking ribs you got going, but please do not ruin ribs with sauce, how about the sauce on the side works much better imho.

Too late - I just put the sauce on, BUT the trim does not have any. I know what you mean though but the people at work want them with the sauce.

The ribs turned out great - I had several phone calls from the "eaters" and all were very happy with the ribs.

Rib Licker is a rub that I made and have been using for a couple years and is really awesome !

Damn man, those look great. Don't listen to zin, i'm pretty sure he's a sauce nazi. :) I personally like sauce on my ribs. I did some jerk ribs tonight though, no sauce and they were great.

You must really like the folks from work, or maybe you're independently wealthy.

It wasn't a donation :)

I did hold them for about 1.5 hours in a cooler and they were still very hot when they got served. And they all gone by 6pm

Yes 20 racks, Pork butts I have 2 that I can use up but she won't be full:)
