We like it and smoke chicken more than anything and i think that this was my best smoked chicken yet. Butt don't get me wrong i like me some good Butts:grin:, and BBQ too haha.

Man! Chicken, 2-3 slices of white bread, a big glass of iced tea and I'd commence to squealing like a pig gobblin that chow down.

Rendezvous Seasoning Rub. It is Awesome on Ribs, but we like it on everything.

I usually lay "spatchcock" them flat if i'm only smoking 2 birds. This time i just put all four of them whole side by side and flipped them once about mid way through the cook. The cavity held a small pool of moisture a wouldn't drip out as long as the bird wasn't stood upright. All four birds were nice and juicy. Sometime i inject them with a little slightly melted butter.
Hickory chunks/250 deg's/170 internal temp/3 to 4 hours

Still can't see how you get nice, non-leathery skin by cooking at such a low temp. How do you do it?
