Question on storing butts.

I just bought a double butt cryo pack from SAMs. I'm planning on smoking one Sat. night for lunch on Sun. I have them both in the fridge still cryo'd. Should I go ahead and open them and freeze the other, or leave them in the cryo until Sat? Also what would be the best way to wrap/bag the one I'm freezing?

It should not matter whether you freeze today or wait until Saturday. When you do wash the butt in cold running water and pat dry. I use a commercial grade food film and triple wrap. Should last for months. Beware of self defrosting freezers.

What I do is pull them as soon as they are done and package them up in freezer bag. If all your doing is waiting like 12 to 16 hours to serve, just package the pulled pork in the fridge and reheat the next day to 145f before you serve.

For some reason they never seem to pull as easily as they do once they come out of the smoker.
