Took a salmon steak and played around with it. Used some Tasty Licks salmon rub. then added a layer of ground up pine nuts and Parmesan. Put it on the Blue Performer with lump and pecan until about half way done, around 105 degrees. Removed from the grill and removed the skin. Wrapped in some thinly rolled-out puff pastry and added some very thin lime slices with rind removed. Brushed with a bit of egg white to help in browning. Baked at 400 degrees until golden brown. served with green beans with EVOO and some of the pine nut/Parmesan mix on them, and some Cilantro Lime brown rice. This was for Lisa. I had a burger as I'm not all that interested in salmon.

Wow, that looks great. My wife asked for salmon the other night and I just grilled (see mutilated) hers. You're really making me look bad here.
