Tom is great! I went to the meat hook often when i lived in brooklyn, he always took really good care of me. knows what he is doing for sure

I loved this! Nothing like watching a master at work. Used to enjoy watching my husband carving up entire sides of beef with a saw and a boning knife. I've spent the last couple weeks shopping for a boning knife I really like, that I can also afford. The search continues...

What took the man 2 minutes would take me 2 hours, and at the end of me doing it, the pig would look like it was slaughtered and butchered by a blind man. Gotta respect a someone who is a master at his craft like that. Those knives are the real deal too.

It reminds me of when I was young and foolish, (about 14), trying to butcher a deer myself. By the time I was doe it looked like roadkill. The next one I watched my uncle do, he was a proper butcher, I was amazed and humbled!
