View Full Version : New Smoker!!! I gotta go!!

My wife sent me a pic of my new smoker that arrived this morning and I have been stuck at work all day. Gotta get out of here and go see if I can get her fired up!! This is a custom smoker built by Scott at SteelCraft Products in Rock Hill, SC. The smoker is fully insulated, I had been looking at all kinds, but wanted an insulated cooker and still have the ability to cook a small pig up to about 80 pounds or so. I think Scott has put together a winner for me. I will report back once I get some cooking done. Anyways, here are some pics of it in the driveway and a few pics that Scott sent me before it left his shop the other day.

I am not sure if Scott from Steelcraft Products has a specific name for the smoker. I have attached a few more pics to help you get the idea. The bottom pan is the ash pan, the one above that is for charcoal/wood. You can raise the fire tray up and use it as a grill as well. I oiled her down and got the first fire rolling. I still have some figuring out with it, it came up to 250 in about 30 minutes, but I think I waited a little late to turn some of the air back because it got up to about 375 pretty quick after that. I love the insulation on it, you can touch it without burning yourself and it seems to be really holding the heat well.

The deflector plate is removable and there is a drain on the bottom of the unit. I have it sitting at just a little angle to help the flow towards the drain. You can take the deflector plate out and move the fire grate all the way up to use as a grill (searing steaks).

This thing is built like a tank and was quite a job getting it in place on the gravel. It rolled really good in the grass. The insulation really holds the heat well.

So far I am very impressed and this was exactly what I was looking for, now I just have to play with it some more to figure out how to maintain my temps. Hopefully I will have some more pron for you guys soon. Thanks for looking!

I don't think it is going to be necessary... I have thought about it though. There are four vents for air intake and I had all four open on the first fire. Once I saw the temp climbing I did not react fast enough to start closing the air intake. I am use to cooking on a UDS so opening and closing vents, generally has a pretty quick affect. I found out that the insulation really plays a big part with holding that temp in there. I think the next time I fire it up I am only going to open up one of the vents and see what that gets me. This gives me time to play before I get serious.

What is a serpentine burn? I was thinking of putting the charcoal in a line and let it start at one end and work its way to the other. Is that the same thing?

Serpentine is where you have a couple of T plates so that the charcoal is laid out in the shape of a snake. You get one end burning and then it burns the rest of the snake over time. Hey guys, been playing with my new smoker and went to the local butcher this morning and put on some chicken, ribs, boston butts, and a few shrimp. Here are some pics of the chicken, ribs, and shrimp, the butts are still on for a little bit more. Sorry, but I posted this pics a little out of order. I will post pics of the butts when they come off.

I cooked at 250 for about 8 1/2 - 9 hours. I used charcoal (about 5-7 pounds) with hickory chunks.

Thanks!! Scott at SteelCraft Products builds some nice equipment and is really easy to work with.

Never had a smoker like this before, so trying to figure everything out, I like the fact that if you open it up for anything, you can literally watch that needle move right back where it is supposed to be. I guess that is where the insulation comes in handy.

He is in Rock Hill. I have not been to his shop, I did everything through phone calls and email. My truck threw a rod the weekend before I was supposed to go pick it up, so I just had Scott to ship it to me.

She holds temps really well. If you have any questions about it, let me know.

I too had Scott build me a trailer mount SP1 GenII smoker and YES it's very well built. I've only had the chance touse it twice but next weekend I'm going to fire it up. Cooks very even and efficent. Photo on Steelcraft web sight on the trailer section is the smoker Scott built for me.

I have a green pneumatic SP1 and love it. Scott builds one solid cooker. I got mine in the textured green, was the 1st one to get the stainless door handle. What a eye turner. Anyone In the market for a cooker I highly reccomend SteelCraft.

That pretty funny. Didn't realize at first look until I read your comment that the thing is in all different locations through the "photo shoot".
