Stopped into the new Cabela's in Buda yesterday and spent too much $. Walked out with a package of seasoning for Sausage balls. Barn Hollow brand. Anybody tried it?
Decided, after getting to the house I should have grabbed a kit for making summer sausage. Anybody tried the Cabela's kit, or the Hi-Mountain they stock?

If you've got a copy of the Luhr Jensen Little chief cook book, the recipe called snacky sausage makes pretty good summer sausage with regularly available seasonings. I stuff it in 3" casings and cold smoke. That book used to be available on their website. Don't know if it still is.

Yes, those kits kick arse!
Making sausage is very easy and I encourage anyone thinking of making their own to give it a try. Once you get yourself a nice grinder and a stuffing horn or a automated stuffer you should check out a few site for recipe ideas.
